Having won the 2012 Olympics, London is in full swing to prepare, and spectator accommodation is already getting booked up. We are trying to do our bit for the environment. We recycle paper, plastic, cardboard, glass and metal and recently we have started recycling organic waste in our compost bin. We also try to use less energy without sacrificing comfort, so we have low energy lighting in place and have plans to take other measures.

Celebrating New Years Eve in London

Like everywhere else in the world, we love to celebrate New Year’s Eve in London. The first thing you want to do is book a bed and breakfast in London.

Note, Trafalgar Square used to be the focal point for New Year’s Eve celebrations but nothing happens there anymore although there will be a large screen to see the fireworks happening the South Bank.

The big event for New Year’s Eve 2011/2012 is the free fireworks display at the London Eye on the South Bank. The display will start after Big Ben chimes midnight and will last for 10 minutes. Its popularity means it gets very crowded and will be limited to 250,000 people in the viewing areas. The best spots to watch the fireworks are from Westminster Bridge and the north embankment of the River Thames, opposite the London Eye, but they will be visible from across central London, as well as being broadcast live on BBC1.

Clubs and Bars

As you would expect, tickets for London clubs are more expensive on New Year’s Eve. Also be aware pubs often charge an entrance fee to try and control the numbers. It is best to plan ahead and get tickets in advance.

Following the huge success of last year’s NYE event, belowzero and IceBar London are hosting Keep Calm and Party On. Tickets start from £39.

River Cruises

A luxury river cruise along the River Thames can be a romantic way to bring in the new year. Most boats plan to moor in sight of the London Eye fireworks at midnight so you will get the best view.

Also, R.S.Hispaniola is a ship permanently moored on Victoria Embankment.

Christmas recipe: Christmas Morning Pie

I first made this festive breakfast pie when entertaining friends on Christmas morning. Each year I was asked to make my famous ‘Christmas Morning Pie’ and the name stuck! But because of its great flavor, I make it year-round.

Christmas Morning Pie

Ingredients

  • 1 pound bulk pork sausage with sage, cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 1 cup shredded Cheddar cheese
  • 2 (9 inch) unbaked pastry shells
  • 6 eggs, lightly beaten
  • 1 cup milk
  • 1/2 cup chopped onion
  • 1/3 cup chopped sweet red pepper
  • 1/3 cup chopped green pepper

Directions

  • In a bowl, combine sausage and cheese. Place half of mixture in each pastry shell. Combine eggs, milk, onion and peppers. Pour half over sausage in each shell. Bake at 350 degrees F for 55-60 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes before cutting.

Christmas recipe: Pumpkin Bread

This is an all time, excellent, every time recipe. It is very simple, and so well loved by many. It has always been raved about – even by kids. This is a large quantity, but you will end up making this size batch more than once. You can also make muffins and small loaves using this recipe; bake for 30 to 35 minutes.

Pumpkin Bread

Ingredients

  • 3 cups canned pumpkin puree
  • 1 1/2 cups vegetable oil
  • 4 cups white sugar
  • 6 eggs
  • 4 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1 1/2 teaspoons ground cloves

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9×5 inch loaf pans.
  2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
  3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

Variations
Add raisins, mini chocolate chips (the best), pecans, or walnuts.
